26 Jun Story on a Plate: Onion Soup
Pursuing a huge moose, the king did not notice how he was completely alone in a remote unfamiliar forest. The screams of the huntsmen, the sound of the horn, the barking of the dogs, everything was swallowed up by the coming night…
Suddenly, he saw a small hunting lodge and walked in. There was no one inside, but the house was clearly inhabited. The king had no choice but to spend the night here waiting to be found.
After the hunt, he was tormented by hunger. There were no servants in the house, but our crowned hero loved to cook, decided to look for something in the kitchen and found only … champagne. At first, the king decided to just drink sparkling wine and go to bed. But severe hunger and a stomach ulcer told him that this was not the best way out.
After searching a little more, he found oil and onions. Standing at the stove, His Majesty Louis XV fried the onions in butter and poured champagne over everything. Yes! Yes! The first onion soup was prepared on the divine drink of the French kings.
Where’s the cheese, you ask? Gruere cheese began to be added to onion soup only in 1815. From then until now, “soupe à l’oignon” has become a fashionable hot dish on the menu of all decent restaurants. In addition, there were different recipes for its preparation.
One of the best options for onion soup in Russia I had a chance to try in the restaurant “Le carré” in Moscow. The institution is presented on our website, because we have tested it personally and recommend it to visit.
